Job Description
We are looking for a passionate and skilled South Indian Cook to spearhead our traditional veg and non-veg culinary offerings. As a wellness resort located in the heart of the Eastern Ghats, our goal is to offer guests authentic, nutritious, and deeply flavorful regional cuisines. You will be responsible for preparing high-quality South Indian breakfast classics, regional Andhra delicacies, signature non-veg specials, and showcasing local tribal-inspired culinary techniques (like bamboo cooking) using fresh, locally sourced ingredients.
Requirements
- • Authentic Culinary Preparation: Curate, prepare, and present high-quality South Indian dishes, ensuring authentic taste, consistency, and visual appeal.
- • Veg & Non-Veg Specialities: Masterfully execute traditional Andhra, Telangana, Tamil, and Kannada specialities. This includes everything from flawless breakfast spreads (Idli, Dosa variations, Pesarattu, Upma) to rich main courses (Gutti Vankaya Kurma, Sambhar, Rasam) and signature non-veg delicacies (Andhra Natu Kodi Kura, Mutton Fry, Fish Pulusu).
- • Local Eco-Tourism Innovations: Learn, adapt, and consistently prepare the region's famous Araku Bamboo Chicken / Bamboo Veg and other locally inspired tribal dishes utilizing wood-fire or traditional cooking methods when required for guest experiences.
- • Wellness & Dietary Alignment: Collaborate with the Head Chef to tweak traditional recipes into healthier formats (e.g., using millets like Ragi and Jonnalu, reducing excessive oil/artificial colours) to align with our resort's wellness philosophy without losing authentic flavour.
- • Kitchen Operations & Hygiene: Maintain strict hygiene, cleanliness, and food safety standards (HACCP/FSSAI guidelines) across the South Indian section. Ensure all meats, seafood, and vegetables are stored and handled correctly.
- • Inventory & Cost Control: Assist in managing inventory, minimizing food wastage, and ensuring that raw materials (especially local spices and fresh produce) are utilized efficiently.
- Required Skills & Qualifications
- • Experience: 3 to 6 years of proven experience as a South Indian Cook or CDP in a 3/4-star resort, premium heritage hotel, or high-volume authentic South Indian restaurant.
- • Cuisine Mastery: Deep expertise in grinding batters, blending regional spice powders (podis/masalas) from scratch, and handling traditional non-veg curries.
- • Local Context: Familiarity with coastal Andhra and Rayalaseema spice profiles is highly preferred. Knowledge of local Vizag/Araku tribal cooking styles is a massive bonus.
- • Education: A diploma or degree in Hotel Management/Culinary Arts is preferred but not mandatory if the candidate possesses exceptional, verifiable practical skills.
- • Language: Fluency in Telugu is highly preferred to coordinate with local kitchen helpers and suppliers. Basic Hindi or English is a plus for guest interaction during live counters.
- What We Offer
- • Competitive salary based on experience and trade test.
- • Free on-site accommodation and meals (highly beneficial given the remote, peaceful nature of the Borra Caves/Araku region).
- • A clean, scenic, and stress-free wellness resort working environment.
- Would you like me to add a specific section for Salary Range or Interview Rounds (like a practical food trial)? Alternatively, I can help you draft a WhatsApp recruitment message based on this JD to send to local consultancy groups.
